Although not well known in the US, amaranth is a complete protein and superfood with a long history. It has been cultivated for over 6,000 years, and was a sacred crop of the ancient Aztecs. In this pudding, it adds a soft and chewy texture to the chocolate and coconut milk, like the tapioca balls in pearl milk tea.

Ingredients

  • 1 can coconut milk
  • ¼ cup sugar
  • ½ cup amaranth
  • ¼ tsp ground cinnamon
  • ¼ tsp vanilla extract
  • 1 bar dark chocolate (3 oz)
  • 1 tbsp arrowroot, or cornstarch

1.   Combine coconut milk, sugar, amaranth, cinnamon, and vanilla in a pot, then stir to mix ingredients. Bring to a boil over medium-high heat. Cover, and reduce heat to simmer for 25-30 minutes.

2.   Turn off the heat. Add chocolate and arrowroot. Mix well to melt the chocolate, and make sure the pudding is smooth.

3.   Pour pudding into a container, and place in the fridge for at least 2 hours, to cool and thicken.
