Ingredients

  • 1 cup red lentils
  • 1 yellow onion, chopped
  • 1 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 large tomato
  • 2 garlic cloves
  • 1 inch ginger
  • 4 tsp red curry paste
  • 2 tsp curry powder
  • 2 tsp ground coriander
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • chopped cilantro for garnish

1.   Add lentils and 3½ cups of water to a pot. Bring to a low boil, then cover and reduce heat to simmer for 20 minutes.

2.   While the lentils cook, heat vegetable oil in a large pan over medium heat. Add cumin seeds and onion. Sautee for 5 minutes.

3.   Puree the tomato, garlic, ginger, red curry paste, curry powder, ground coriander, cayenne pepper, and salt in a blender to make the curry sauce.

4.   Pour the curry sauce over the onions. Simmer for 5 minutes, until thickened.

5.   The red lentils should now be ready. Drain any excess water from the lentils, then stir the curry and onions into the pot with the lentils.

6.   Top with fresh cilantro, and prepare for taste bud fireworks!
